INGREDIENTS

for the marinade

  • 1tsp dried thyme
  • 3tbsp Tate & Lyle Dark Soft Brown Sugar 
  • 3tsp Worcestershire Sauce
  • 1/2tsp chilli flakes
  • 3tbsp balsamic vinegar
  • 3tbsp dark soy sauce
  • 3tbsp tomato ketchup
  • 4tbsp olive oil

for the chicken

  • 6 chicken legs
  • 4 red onions (peeled and cut into wedges)
  • 12 cherry tomatoes

HOW TO MAKE THIS RECIPE

  1. Preheat the oven to 200°C/400°F/Gas Mark 6.
  2. Put all the marinade ingredients in a large plastic sandwich bag and add the chicken and the onion. Seal and leave to marinate in the fridge for at least one hour.
  3. When you are ready to cook, tip the contents of the bag into a roasting dish and add the tomatoes. Bake in the oven for 20 minutes, then serve.
